The Vikings are being cautious with running back Adrian Peterson’s surgically repaired knee, holding him out of the remaining preseason games. Peterson torn his ACL eight months ago in Week 16 of the regular season and has been committed to being ready for the 2012 season opener. Peterson has practiced this training camp and is eager to test the knee in live action. While one could understand the Vikings staff playing it safe, this could cause Peterson to have a slow start this season.
